Partridge can be roasted whole, similar to Cornish hen, or broken down into parts for braising or pan-searing. The mild flavor pairs well with sweet vegetables, fruits like pears or apples, and white wine sauces. Roast with herbs like thyme and rosemary for a classic preparation.
Cooking: Roast at 375°F until internal temperature reaches 165°F in the thickest part of the breast. Let rest for 5-10 minutes before serving.
